• 1 can whole-kernel corn (drained)
• 1 can black beans (rinsed and drained)
• 1 cup sour cream
• 1 cup salsa
• 2 cups shredded cheddar cheese
• 1 can tomatoes and chilies
• 1 cup instant rice
• Sliced black olives
• 1 cup Monterey jack cheese
• 1 cup crushed tortilla chips
Preparation:
1. Preheat oven to 180 degrees C
2. Cook rice according to package directions
3. Combine all ingredients except olives, Monterey jack cheese, and
chips
4. Top with remaining ingredients
5. Bake for 1 hour
